Ennai Kathrikai Kulambu/Brinjal curry
1. Onion- 3
2. Tomato-4
3.Tamarind paste
4. brinjal -250gms( cut only the ends diagonally)
5. garlic pods-10
6. sambar powder-2tbsp
7.Daniya powder- 1tbsp
8.Cumin powder- 1tbsp
Procedure:
1. In a heavy bottomed kadai, shallow fry the brinjal and keep it aside
2.In same kadai,heat oil(preferably gingelly oil)
after it is getting heated add vadavam for tempering
3. fry the oniones, tomatoes and garlic until it turns mushy
4.Add salt and chilli powder, cumin and daniya powder
5. After they become mushy add tamarind water.
6. Finally at this stage add, brinjals
7. Finally add corinader and curry leaves
